Bright
flavorful beets are easy to grow from seed, and as an added bonus, beet greens
are a gourmet delight. Leaves contain healthy portions of iron, potassium and
Vitamin A. Beets are a vegetable that
can easily fit into small space gardens.
In choosing a site for beets, keep in mind that although they tolerate
partial shade, they will perform best in full sun. Spade organic material into the soil to a
depth of about 8 inches. Remove any stones that may be in the soil so
that the beets can develop properly.
Beet
seed can be sown as soon as the ground can be worked. This is usually about 30 days before the last
spring frost date. In northern areas,
successive sowings at three week intervals up to July will insure a continuous
crop through summer and fall. In
southern areas, late winter is the time to sow for a spring crop and then sow
again in late summer for a fall harvest.
Carefully
firm the soil over the seed as beet sees need contact with the soil to
germinate. Beets will sprout in 1 to 5
weeks, depending on the soil temperature.
Mulch organic matter to help retain moisture in the soil and to
discourage weeds. Thin the seedlings
when true leaves appear, allowing 2 to 3 inches between plants. If larger beets are desired, thin again about
a month later leaving 6 inches between plants.
The thinnings need not go tow waste as these can be either replanted or
the young greens can be used in spring salads.
A Sunny patio or balcony can be easily turned
into a vegetable garden with the use of containers. And beets can be an ideal companion to grow
along with shallow rooted annuals for a decorative and edible touch. If beets are grown for the sake of their
greens, harvest the whole plant when the leaves are about 6 inches high. Unlike many other vegetables, beet roots do
not need to reach a certain size to be edible.
They may be lifted when they are 1½ to 3 inches in diameter and at this
stage they are tender and sweet. When
harvesting, leave an inch or two of the tops attached to the roots so they will
not bleed. Beets can be left in the
ground for storage until just before the first frost.
